Cook with Case: Sweet Baked Potato With Rice, Chick Peas and Homous

Hello Everyone!

Today I thought I would share a recipe I made a couple times a few months ago now which is delicious! It’s vegan free and also vegetarian but feel free to change things up a bit!

This recipe is going to be a baked sweet potato on a bed of rice, with homous on top, sprinkles with baked and seasoned chick peas!

What you will need (1 serving):

  • 1 Sweet Potato
  • Pilau rice (you can choose whatever you like best)
  • A tub of plain homous
  • Lemon Juice/Wedge
  • Dill
  • Chick Peas
  • Can of fresh diced tomatoes
  • Seasonings (Pepper, salt, chilli, cinnamon, cumin and garlic)
  • A baking tray and foil
  • Olive oil

Step One

Take your sweet potato and wash with water to remove all dirt etc, but do not peel, we want the crispy outside skin just like on a regular potato. Cut a cross shape in the potato, drizzle with oil so that it will crisp and pop on a foil tray in the oven for around 25 minutes on 180 degrees

Step Two

Whilst the potato is cooking, take three table spoons of homous into a bowl and squeeze in a wedge of lemon juice, a handful of chopped dill and parsley and then mix, this should give your homous a sweet yet savoury flavour

Step Three

Drain your chick peas and take a handful and lay them out on a foil tray, drizzle with olive oil and then season to taste, then bake in the oven for around 10 minutes until nice and golden (don’t put them in too soon as you don’t want them to be done before your potato!)

Step Four

Take your rice and bring to the boil; I used Pilau microwavable rice which takes three minutes. I prefer more plain simple rice for this recipe just for a blank canvas to bring all the other flavours together

Step Five

Once your baked potato is ready, rice soft and your chick peas golden, place the rice flat on a plate, serve the delicious sweet potato boat on top, add a splodge of homous and sprinkle with chick peas! Then garnish with salad on the side and a spoonful of chopped tomatoes for that added sweetness!

It really is gorgeous! So healthy, really simple and tasty!

Do give it a go! You could even use a normal potato if you would like, but the sweet potato is a nice change 🙂

And if you want to make multiple, you could cut the potato into long strips and share, or just bake one each! A handful of chick peas per person and use the entire tub of homous for upto 4 people
